SALSA:


1. Salsa Chicken Skillet


Ingredients:

2 chicken breasts, sliced

1 bell pepper, sliced

1 onion, sliced

Mexican salsa Seasoning from Herbs Hi

1 tbsp olive oil

Salt and pepper to taste

Fresh cilantro for garnish


Instructions:


1. Place the skillet on medium heat; add olive oil.

2. Incorporate some slices of chicken and fry to a brown colour.

3. Add sliced bell pepper and slices of onions and sauté until they are slightly tender.

4. Sprinkle Mexican Salsa Seasoning and let simmer for 5-7 minutes.

5. Seasoned with salt and pepper and garnished with fresh cilantro. Serve hot.


2. Mexican Salsa Salad


Ingredients:

2 cups cherry tomatoes, halved1 cup diced cucumber1/2 cup finely chopped red onion1/2 cup diced bell pepper (any colour)1/4 cup chopped fresh cilantro1 tablespoon lime juice1 tablespoon olive oilSalt and pepper to taste


Instructions:

1. In a large bowl, combine the cherry tomatoes, cucumber, red onion, and bell pepper.

2. Add the chopped cilantro, lime juice, and olive oil. Mix well.

3. Season with salt and pepper to taste.

4. Serve immediately or chill in the refrigerator for 30 minutes to let the flavours meld.
